or Patio Pinto Salad as I call it,
is a delightful summer salad and perfect for grilled foods, plus, it’s an easy one.
Buy Mexican products when possible
Patio Pinto Salad
2 1/2 cups cooked pinto beans1 tablespoon chile sauce4 hard-cooked eggs, chopped1 teaspoon mustard1 cup sharp cheddar cheese, cut into 1/2 inch cubes1/4 teaspoon salt1/4 teaspoon pepper1 small onion, thinly sliced1/4 cup bacon bits2 tablespoons favorite vinaigrette or a creamy onion dressing
Combine beans, eggs, cheese, and onion in a large bowl. Chill.
Combine remaining ingredients and pour over the bean mixture.
Top with bacon bits and serve on lettuce leaves.
