He is a former pastry chef for the Walt Disney Company and author to titles including The Cheesecake Bible, The Complete Baking Cookbook, 125 Best Cheesecake Recipes, 125 Best Food Processor Recipes and 125 Best Biscuit Mix Recipes.
Geary covers everything from white and red sauces, marinades and rubs, to butters and spreads and dessert sauces. Recipes include Fast & Easy Marinara Sauce, Vodka Sauce, Fresh Spicy Ginger Dressing, Tarragon Pickle Relish, Cool Cucumber Parsley Marinade, Orange Chipotle Salsa, Gorgonzola Scallion Butter, Curry Cheese Spread, Deep Dark Truffle Sauce and Dark Chocolate Peanut Butter Fondue Sauce.
As the title says, there are 500 recipes and folks, every one of these looks just great and are just as easy to make like this one. I have only tried a few, like this one today for our Monday Cajun feature. Enjoy!
Cajun Spice Dressing
makes 1 cup
4 ounces cream cheese
1/2 cup mayonnaise, homemade preferred
1/4 cup buttermilk
1/2 teaspoon hot pepper flakes
1/2 teaspoon dried onion flakes
1/2 teaspoon paprika
1/2 teaspoon garlic salt
1/4 teaspoon caraway seeds
3 drops hot pepper sauce
In a food processor fitted with a metal blade, process all ingredients until smooth, about 2 minutes.
